My kids had a joint birthday party with a Pokemon theme this year.
Gluten free? No problem! That was the easy part. (It kinda helps when your mom is a GF blogger!).
Decorate a cupcake cake to look like a poké ball without any food dyes??? Yikes. That was a toughie, but I think I did OK! What do you think?
Obviously I’m a baker not a decorator, but I’m proud of it! I made both vanilla & chocolate cupcakes (gluten free recipes for each will be posted soon!). The white frosting is a cream cheese frosting, I used chocolate frosting for the usually black part of the Pokemon ball, and then stuck sliced strawberries onto half the cupcakes for the red section.
I can’t take credit for the genius use of strawberries. That one came from my 6 year old daughter. The creative mastermind of the family. <— Really. I’m biased of course but her artistic ability and thought process is pretty amazing if you ask me. And she’s just a cool kid. Fun fact: She went as a cat for Halloween in 2013. She has worn the cat ears every.single.day since then. She doesn’t even look right anymore without the ears.
Back to the cupcakes and food dye issue: I was over-thinking the problem, trying to come up with ways to boil red cabbage, reduce the liquid down, and basically turn my kitchen into a science lab in order to create my own food dye. So glad I have a kid who can see the forest for the trees that can say, “Duh mom! Just use strawberries!” Totally love it when my kids are smarter than me.
